''Casey's own 'Roaring Water Bay Mussels' cooked in White Wine''

INGREDIENTS

- 1.75 kg Roaring Water Bay Mussels (washed and bearded)
- 50 g garlic butter
- 1 medium onion finely chopped
- 50 ml dry white wine
- 1 Tablespoon coarsely chopped parsley

How to prepare the 'Water Bay Mussels': 

Step 1: Put the mussels, garlic butter, onion and white wine into a very large pan cover and cook over high fire for about 4 / 5 minutes, shaking the pan every now and then, untill the mussels have opened

Step 2: Spoon the mussels into 1 large of 4 individual warmed bowls, add the parsley to the remaining juice and then pour all but the last 2 tablespoons which may contain some grit over the mussels, serve with crusty bread

Step 3: Add a dash of cream and fresh dill to the mussels and lightly toss before serving,

Step 4: Add basil pesto cream toss before serving
